I wouldn’t exactly call this a recipe. More of a mixture of tasty ingredients. However, I wanted to share it anyway because it’s so flippin tasty!

I’m not usually much of a salsa lover. I’ll have a bit, but the regular tomato salsa always seems a little too bland for me. Even the spicy stuff doesn’t generally have much depth of flavour in my opinion.

But this salsa….

Juicy pineapple, tomatoes and peach given a kick up the backside with a good squirt of lime juice and some serious jalapeno heat. Yesss!

I served it with some spicy rice and salmon (recipe coming on Wednesday) and it worked great. So much more interesting than adding a salad on the side of dinner. Full of flavour, but healthy too. Even the kids enjoyed it (although they ate around the jalapenos!).

I managed to refrain from being too naughty this weekend. On top of the car breaking and my phone accident that I told you about last week, I also managed to break the washing machine. I’m not generally a superstitious person, but it seems bad luck does come in threes.

I was on the verge of eating a large dairy milk, but managed to hold back and just have a few chunks (yay me!), so although I don’t think I’ve lost anything this week, I’m pretty confident I haven’t put on the 7lbs I’ve already lost.

Another 6 or 7lbs to go and I’ll be reasonably happily (and will try not to celebrate with daily cupcakes until I’m back where I started!!)

This Peach and Pineapple salsa would go great as a side with salmon.

Ingredients

  • 1 ripe peach diced
  • ¼ of a small pineapple skin removed, chopped into small chunks
  • 1 jalapeno sliced finely
  • 10 vine-ripened cherry tomatoes cut into quarters
  • Small bunch coriander cilantro, roughly torn
  • Juice of 1 lime
  • ½ tsp. salt

Instructions 

  • Place all of the ingredient into a small bowl.
  • Mix together and serve.

Notes

You can make the salsa a couple of hours in advance, just mix everything together – except the coriander – then cover and refrigerate. Mix the coriander in just before serving.
