Cream cheese, nectarine and honey toastie - day one of my five day 'Sweet Toasties' series to brighten up your holiday breakfast.

We’re only 5 days into the school holidays (and 5 days since I finished work!) and the kids have already decided they’re bored of cereal and toast, and want something special for their holiday breakfasts.

I quite often make eggs or pancakes for breakfast on weekends, but rather than revert to that every day, I decided to set myself a little challenge that would be fun for the kids too.  I started thinking about this series a few weeks ago when my son Lewis came up with his own flavour combination (see tomorrow’s post for that one), and now seems like the perfect time to give it a go!

So, I’ll be posting a new sweet and fruity toastie every day for the next 5 days (including today).

I’m starting the series with one of my favourite summer fruits – Nectarine.  So juicy and full of flavour at this time of year!  Mixed with honey and cream cheese, this is a sticky, drippy toastie that’s guaranteed to put a satisfied smile on your face.

Cream Cheese, Nectarine and Honey Toastie (Serves 1)
Ingredients:

  • 2 slices of thick cut bread
  • 1 ripe nectarine, cut into slices
  • 2 tbsp cream cheese (such as Philadelphia)
  • 2 tsp runny honey

Method:

  1. Toast your bread until nicely browned.  Slice each piece in half, then spread two of the halves with the cream cheese.  Place the nectarine slices on top and drizzle with honey.  Place the remaining half slices of toast on top and enjoy!  Drizzle a little more honey on top if you like your toastie extra sticky.
